Our Process.

There are faster ways to bake. We're not interested. What comes out of our ovens is the result of time, whole grain, and a sourdough starter we've kept alive for years.

Since we brought our first stone mill in-house, we've ground our own whole grains rather than buying flour in. Milling ourselves lets us control exactly how fine the flour is and how much of the grain we keep — and we keep all of it, bran and all. Nothing is sifted away. That's where the deep flavor, the aroma, and the real nutrition of a whole grain live.

Our bread and pastry take days, not hours. A loaf begins with freshly milled whole grain and a natural sourdough starter, then ferments slowly — often around three days from start to shelf. That long, patient rise is what builds strength in the dough, opens up the airy crumb, and draws real depth of flavor out of the wheat.

People are often surprised our sourdough isn't sharp. That's on purpose. We keep our starters young and healthy so they lift the bread and lend a gentle tang — flavor, not sourness. It's bread meant to sit alongside a meal, not fight it.

Everything is made from scratch, by hand, every day — and never with preservatives. We reach for high-butterfat butter and honest, natural ingredients even when they cost more, because you can taste the difference.
