Fougasse breadFougasse, pronounced foo-gaas, is a specialty bread that is filled with mix-ins such as cheese, olives, herbs, seeds, dried fruit, etc. We bake ours with Gorgonzola cheese crumbles and roasted walnuts. If you like a crispy crust, this is your bread!! The cuts and design are a bit different at each bakery and we have our own artistic spin.

This is the perfect bread to turn any meal or event into a special occasion as it is a great looking and delicious loaf. It is the perfect accompaniment to a cheese board, as an appetizer, or as a loaf to bring to gatherings. Our favorite way to eat this bread is to “tear and share” with friends and family!

A Brief History : Fougasse dates back to ancient Rome but more recently is associated with Provence- Southeastern France.  It was traditionally used to assess the temperature of a wood fired oven. The time it would take to bake would give the baker an idea of the oven temperature and whether the rest of the bread can be baked (hence the French phrase “il ne faut pas brûler la fougasse“: “do not burn the fougasse“.
